Where to Spend — and Where to Save — When Starting Your Food Truck

Every new food truck owner faces the same math problem: the build costs more than you planned, and everyone has an opinion about where the money should go. After watching a lot of trucks launch — some that thrived and some that struggled — here's where spending real money pays for itself.
Spend Here First
1. Your Exhaust System
A sufficient exhaust system will keep your truck cooler, cleaner, and safer for you and your staff. This is not the place to cut corners: you and your team will spend hundreds of hours in that kitchen, and heat, grease, and air quality compound every single shift.
2. A Quiet Generator
There is nothing worse for people sitting on a patio or trying to enjoy live music than a food truck with an excessively loud generator. Our recommendation: one inverter generator under 5,000W — or if your power requirements are greater, purchase two inverters and parallel them. Quiet power keeps venues inviting you back.
3. A Truck or Trailer Wrap
Your brand is everything. Good food only goes so far. If people can recognize you and your truck looks professional, you will sell more. A wrap is marketing you pay for once that works every hour you're parked anywhere.
4. Proper Menu Signage
You want your guests to know what you sell and be able to pick a menu item before ever walking up to your window. A menu that can be read from a distance is far more effective than a chalkboard, whiteboard, or flyer in your window. Fewer decisions at the window means a faster line — and a faster line sells more food.
5. A Good POS
You want to serve your customers efficiently and effectively. A POS that can notify customers when their order is ready is imperative — nobody wants to hover by your window listening for their name. A kitchen display system is also wildly beneficial once tickets stack up.
6. Marketing — Every Event, Every Time
Promote EVERY event. Post regularly about where people can find you, what you're serving, and who you are. Boost your events and specials on social media with $10–20 ad budgets per post. If it only brings two customers, you break even — any more is profit, plus you gain followers and attention that compound over time.

Refrigeration Equipment, Tables, and Racks
Find a good local dealer that refurbishes used refrigeration equipment, or watch restaurant auctions. You can typically buy used equipment for 25% or less of the cost of new. You can always upgrade later if you want, but you'll hit ROI much quicker on used equipment than spending on new. You may still have repair costs — but experience says new equipment simply isn't worth it if you can find something used.
Buy a Trailer Instead of a Truck
Especially if you already have a tow vehicle. Trailers are far less expensive to build out and get started with than a driveable truck. And there's a hidden advantage: if your tow vehicle breaks down, you can rent another and never miss a day of sales. If your driveable food truck breaks down, you're dead in the water — expensive repair bills and no way to make money while it sits in the shop.
The Bottom Line
Spend where customers and venues can see, hear, taste, or feel the difference — exhaust, power, brand, signage, service speed, and marketing. Save where they can't: nobody has ever ordered fewer tacos because your refrigerator was refurbished or your kitchen rolls on a trailer axle. Put the money where it shows.
